Pure Pennsylvania Maple Syrup Grades:
Grade A Light Amber is very light in color and has a sweet mild
maple flavor. This grade of syrup is usually made earlier in the season
when the weather in northeast Pennsylvania is still cold. This is the
best grade for making maple cream and maple candy.
Grade A Medium Amber, is just a slight bit darker and has a little
more maple flavor. It is our most popular syrup grade used at our bed
and breakfast table. This grade of syrup is usually made as the weather
in north eastern Pennsylvania warms up a bit.
Grade A Dark Amber, is the darker of the grade A pure maple syrup.
It has a stronger maple flavor. This grade of syrup is usually made later
in the season when the days get longer and warmer.
Grade B is sometimes called cooking syrup. This syrup is made late
in the season and is darker than grade A. Grade B syrup has a strong maple
flavor as well as some caramel flavor. Some people enjoy the flavor of
this grade served at breakfast because of the strong flavoring. At Epler's
Bed and Breakfast this grade of syrup is used in making
maple nut bread and other goodies served at our breakfast table.
